It is an acidic by-product of wine-making found in the sediment left behind in wine barrels after fermentation. It becomes a powdery white substance used in baking after being purified. Cream of Tartar stabilizes egg whites to prevent the egg from collapsing too quickly. It is also added to baked goods to help activate the alkaline with baking soda as it forms baking soda when mixed with baking powder.
