Located on the flanks of Soufriere since the 17th century, the Bologne plantation experienced different types of cultivation until the middle of the 19th century where the monoculture of sugar cane was developed on all its plots. This revolution fully revealed the exceptional richness of this volcanic soil and everyone agreed that the Bologna plantation concentrates on a few tens of hectares the most beautiful rum terroirs, with a very unique potential on the island. In business since 1887, Bologna is the oldest distillery in Guadeloupe. The palate is intense and balanced with great flexibility of flavors. The aromatic palette is very faithful to the Bologna style: sugar cane and candied fruits in the depth, with an iodized edge. Bourbon gourmet vanilla but also spices (star anise, white pepper) are supported by silky tannins that carry the structure. The mid-palate stretches gradually towards notes of ripe banana, cocoa and vanilla then to a more spicy register (gingerbread, candied ginger, cinnamon). On ice, it develops surprising aromas of candied tropical fruits. Its persistence is remarkable. The retro-olfaction is slightly spicy and praline. Unquestionably to rank among the greatest spirits.
